Visit the pastoral countryside around Brussels to discover Wambeek – and Brouwerij De Troch – which produces unique lambic beers, including both traditional styles and a wide array of contemporary fruited lambics.
Brouwerij De Troch is one of the founding members of HORAL, the High Council for Traditional Lambic Beers, and has been owned and operated by the same family since the late 18th century. The brewing practices at De Troch have been mostly conserved over the ensuing centuries and the brewery is now a federally-protected historical landmark. To this day, beginning in the fall, you can find 6th-generation brewer Pauwel Raes starting an 18-hour brew day by lighting a wood fire at the base of the boil kettle.
